History of Tuna Patties


Tuna Patties or Fish cake gained popularity in East Asia. Most of the region gained culinary from their dynasty in Japan, Mangalo, Cambodia, Korea, and China. Patties made from Fish were also popular across many other continents in Europe, Asia, America, and Africa. Most fishing village near the ocean started making Tuna patties or fish cake


Prep Time - 10 Mins

Cooking Time - 15-20 Mins

Course - Snack and Main Course



Ingredients -


  1. 2 Canned Tuna

  2. ½ Onion Finely Chopped

  3. ½ Bunch of Cilantro/Parsely

  4. 2 Cloves of Minced Garlic

  5. ½ Cup All-Purpose Flour

  6. Breadcrumbs

  7. 1 Whole Egg


Preparation -


  1. Remove water from cans and add two cans into the mixing bowl.

  2. Add Finely chopped Onion and Cilantro with minced garlic.

  3. Add your all-purpose flour(I am using chickpea flour) with a Whole egg to bind everything together.

  4. Finally, add some breadcrumbs to finish it off, it will bring crispy texture to your patties.

  5. Mix everything adjust your consistency.

  6. Make patties, and let them rest.

  7. You can Airfryer, Bake, or fry. I prefer air frying them at 400F for 15-20 mins both the side.

Serving suggestion

You can serve them with salad, bun or enjoy them as a snack.

History -


Falafel is Middle Eastern food believed to be originated in Egypt and spread to other parts of the Middle East as trade and literature flourished. Falafel is a deep-fried ball or patty made up of chickpeas, fava beans, or both. The deep-fried version can be slightly high in calories, but you can either air fryer or bake depending on your goals.



Prep Time - 10 Min

Cooking Time - 3-5 Mins

Course - Breakfast, Snack, and Main Course



Ingredients -


1 Cup boiled chickpea

¼ Cup bread crumbs remove this to be Gluten-free

2-3 garlic pod

½ onion

⅓ Cup All-Purpose Flour / Chickpea Flour

Salt to taste

½ Tablespoon cumin

Cilantro or Parsely


Serving Suggestion


Serve with Hummus or Tabbouleh salad


Preparation -


  1. Add boiled chickpea to blended with onion, garlic, salt, and Cilantro/Parsely.

  2. Blend together to make a paste. Note check the consistency from the video.

  3. Add your falafel mix to the mixing bowl and mix with breadcrumbs and flour.

  4. The mix will have a nice bidding structure.

  5. Fry 375 F until golden brown or 400 F in air fryer/bake for 15 min both side


Final Arrangement


Serve with some tomato Cilantro Salad, Hummus, and Pita

History of Dhokla


Dhokla is Savoury bread, made up of chickpea flavor. The origin of the Dhokal is in present-day Gujarat. The dish quickly gained popularity across India after gaining popularity in Maharashtra, Delhi, and Rajasthan. It is a light snack loved across the country.




Prep Time - 10 Mins

Cooking Time - 3-5 Mins

Course - Snack and Main Course


Ingredients -


Dhokla in 1200w Microwave


1 cup Chickpea Flour

2 tablespoon Semolina (Suji)

2 tablespoon oil

Salt to taste

½ tablespoon Turmeric


Fermentation

½ Baking Soda


Tadka


3-4 Slit Green chili

1 tablespoon Mustard seed

Salt

1-2 tablespoon for taste

1 tablespoon asafoetida(hing)


Garnish

Coriander and Shredded Coconut


Preparation


Dhokla -

  1. In a bowl, add 1 cup chickpea flour, salt, 2tsp semolina, and ½tsp turmeric.

  2. Mix well with water. Check your consistency, it should be thick yet flowing.

  3. Add 1 tablespoon of oil so that it’s not sticky.

  4. Set it aside for 10-12 mins.

  5. Once everything looks good, add ½ tsp baking soda. It will start inflating.

  6. Add to microwave friendly mold, which is greased well.

  7. Place in microwave for 5 minutes or depending on your Microwave power.

  8. Once done, check with the toothpick. Dhokla should run clean.


Tadka -

  1. To the hot pan, add some oil.

  2. Once the oil in medium hot 1tsp Mustard seed and 1/2tsp asafoetida(hing)

  3. Freshly chopped 3-4 Green chili

  4. Salt to taste

  5. Add sugar to balance everything out

  6. Lastly, add some water so you can use the tadka and pour it onto your Dhokla


Final Arrangement

Remove Dhokla from mold and cut them into pieces, and add your tadka. Garnish it with some freshly chopped coriander and shredded Coconut. Serve it with some sweet tamarind chutney and green mint chutney.
